Fit Food

If there's anyone in the world who hates dieting, it's me. Dieting for me can mean a lot of things, eating to lose fat, eating to gain muscle, or just eating to maintain. Anyway you cut it, eating like a bodybuilder sucks most of the time. In order to help make life a little easier on all of us, AE will be including a new recipe every week so that you can add a little variety to your life.. 

 

Cornbread Turkey Pot Pie
Adapted from Campbell Soup Company

low-fat cream of mushroom soup

c

canned corn, drained

c

turkey light meat, skinless, cooked and cubed

ozs

cornbread mix

3/4

c

skim milk

1

whole

egg

1/2

tsp

salt

1/2

low-fat cheddar cheese, shredded

 

 

 

Preheat oven to 400. Prepare a 9" pie pan with cooking spray; set aside. In a mixing bowl, combine soup, corn, and turkey. Spread mixture evenly into prepared pan; set aside. In another mixing bowl, combine cornbread mix, milk, egg, and salt. Mix well. Pour evenly over turkey mixture in pan. Sprinkle with cheese. Bake for 20 minutes, or until golden brown on top.

Impossibly Easy Chicken Ranch Pie

chicken breast strips, cooked and cubed

ozs

frozen mixed vegetables, thawed

c

low-fat Monterey Jack cheese, shredded

salt

1/2

c

low-fat baking mix

ranch salad dressing mix

c

fat-free milk

whole

eggs

 

 

 

Preheat oven to 400. Prepare 9" square pan with cooking spray; set aside. In a mixing bowl, combine chicken, mixed vegetables, cheese, and salt. Mix well. Place mixture into prepared pan. In another mixing bowl, combine baking mix, dressing mix, milk, and eggs. Mix well. Pour over chicken mixture in pan. Bake 35 minutes, or until knife inserted in center comes out clean. Cool five minutes before serving.

Parmesan Noodles & Turkey

fat-free parmesan cheese

black pepper

turkey light meat, skinless, cooked and cubed

 

 

 

Prepare noodles according to package directions. Drain. In a saucepan, combine soup packet, milk, parmesan cheese, black pepper, turkey, and noodles. Mix well. Cook until heated through.
