Fit Food

If there's anyone in the world who hates dieting, it's me.  Dieting for me can mean a lot of things, eating to lose fat, eating to gain muscle, or just eating to maintain.  Anyway you cut it, eating like a bodybuilder sucks most of the time.  In order to help make life a little easier on all of us, AE will be including a new recipe every week so that you can add a little variety to your life.

Ravioli Bake
Adapted from Betty Crocker's, Microwave Cooking

ozs

beef ravioli in tomato and meat sauce

1

c

mushrooms -- sliced

1/2

c

onions -- chopped

1/2

c

fat-free mozzarella cheese -- shredded

1/4

tsp

Italian seasoning

1/4

tsp

salt

1/4

c

croutons -- crushed


In a mixing bowl, combine beef ravioli, mushrooms, onions, cheese, Italian seasoning, and salt. Mix well. Spread in a 1-quart casserole dish. Sprinkle with croutons. Cover loosely and microwave until ravioli mixture is hot, 5 minutes.

Wagonwheel Drumsticks Dinner
Adapted from Kenmore Microwave Cooking

chicken drumsticks, skinless

fat-free Italian salad dressing

1/4

c

white bread crumbs

1/4

c

fat-free parmesan cheese

potatoes

 

 

cut in half lengthwise

 

 

paprika

 

 

 

Place salad dressing a small shallow dish. In another small shallow dish, combine crumbs and parmesan cheese. Coat drumsticks with dressing first, then dip into crumb mixture. Place into a ten inch round microwave-safe dish, with the bony ends oriented towards the center. Place a potato half between each drumstick. Sprinkle paprika over each drumstick. Cover and microwave on high for fifteen minutes, rotating dish once during cooking time. Turn drumsticks over and potatoes around. Cook on high again for thirteen minutes, or until chicken is no longer pink, during dish once during cooking time.

Pepper Chicken Fettuccini Toss

red bell peppers, chopped

green bell pepper, chopped

Prepare fettuccini according to package directions; drain. In large skillet, cook chicken, bell peppers, onions, and salt. Cook until vegetables tender. Add hot cooked fettuccini and parmesan cheese; tossing to coat.
